So, I purchased a lot of chicken (boneless,skinless,breast) last week at Vons when they were on sale for $1.97lb. So, you might be seeing lots of chicken the next few weeks:) But it's healthy and my kids love it! I also have some fabulous recipes from Rachel Ray...sissy gave me her latest magazine and it is FILLED with awesome recipes!!!
Monday:
BBQ Steak (soy sauce, olive oil, pepper, montreal steak seasoning) and Broccoli and Grand Biscuit Rolls
Tuesday:
Rosemary Ranch Chicken with pasta
Wednesday:
Speedy Easy Cheesy Chicken Enchiladas...family favorite and I'm busy so it's easy for the hubby!
Thursday:
Kickin' Mini Meatloaves (From Rachel Ray...couldn't find recipe online...)
Ingredients:
1 sweet potato (10 oz) peeled and cut into 1/3 inch cubes
3 slices firm white bread, torn
1 1/2 lbs lean ground beef
1 egg
1 small onion finely chopped
2 tbsp. chopped cilantro
1 tbsp. finely chopped chipotle chiles in adobo sauce, plus 2 tsp sauce
6 tbsp. ketchup
2 cloves garlic finely chopped
salt and pepper
EXTRA...stuff each meatloaf with 2 tbsp. cheddar for a gooey, cheesy center)
Directions:
1. Preheat oven 20 375. Grease 4 cups of a 6 cup jumbo muffin pan. In a sauce pan of boiling, salted, water, cook the sweet potato until partially cooked (about 3mins) drain.
2. Using a food processor, pulse bread to form breadcrumbsm transfer to a large bowl. Add the beef and egg, onion, cilantro, chipotles, 1 tsp adobo sauce, 2 tbsp ketchup, the garlic, 1 1/4 tsp salt, and 1/4 tsp pepper, stir to combine. Stur in sweet potato. Divide beef mixture among the greased muffin cups, packing well and mounding slightly. You can add the cheese here.
3. In a small bowl, combine the remaining 4 tbsp ketchup and 1 tsp adobo sauce and coat the tops of the meatloaves with the mixture. Place muffin pan on a baking sheet and bake until cooked through and browned on the top. 40 mins.
FREEZE...wrap the cooled meatloaves, in the pan, with foil and freeze for up to 1 month.
REHEAT: preheat overn to 350 place the muffin pan straight from the freezer, in the oven and bake until heated through. 45-55mins.
