Thai Chicken Pasta

So tonight was one of those late nights after soccer practice and dance class. Mama is tired and so are the kids, but everyone has to eat. Luckly the kids can manage baths with little assistance and I wanted to try something new. And as luck would have it, I had all the ingredients...okay not all, but most...substituted here and there, but it all came out fabulous!!! I got this recipe from I'm an Organizing Junkie My pictures came out almost as good as hers...and the meal was finger licking good! So if you have nothing planned for tomorrow's dinner, try this!

Thai Chicken Pasta-Nina's Version
12 oz. uncooked Penne Pasta


1/2 cups salsa

1 1/2 cups Stewed Tomatos Italian seasonings

1/2 cup Organic smooth peanut butter

1/4 cup orange juice

2 Tbs. honey

4 tsp. soy sauce

4 cups chicken breast, cubed and cooked

1/4 cup  peanuts

1/4 cup torn fresh cilantro


Directions: Cook pasta according to package directions. Meanwhile in large sauce pot, combine the salsa, peanut butter, orange juice, honey, and soy sauce.
Heat until sauce thickens and add chicken; heat through. Drain pasta. Serve with chicken mixture. Garnish with peanuts and cilantro. Makes 8 servings. Voila!
 
This took me 20mins and everyone was fed, bathed, read 4 stories, teeth brushed by 9:30pm...oh and some 2nd grade HW was accomplished too...we got home at 7:45pm...easy dinner!
