O'Brien/Jonesy Burritos





So it's baseball night and I always try to find something I can make and take since it goes from 5:15 to 7:00pm.  This recipe I found in the same Savemart insert at the grocery store.  It's originally called O'Brien Burritos because you use the frozen O'Brien Potatoes.  I added some ground turkey to make it a little more substantial and some cheese of course.  So I re-named them O'Brien/Jonesy burritos.  They turned out great! My husband had like 4 and my sister who happened to be by (shocker) helped herself as well.  It's super easy and super yummy, just the way I like it! And it's also on the healthy side since it calls for black beans. Enjoy!

O'Brien/Jonesy Burritos-to go!:
3 cups Frozen Potatoes O'Brien
1 (15oz) Black beans, drained
1/4 cup fat free sour cream
1/2 cup salsa
Fresh Cilantro-I forgot to add this but it still tasted great
Tortillas (any kind-whole wheat or not)
Pkg Ground Turkey
Shredded cheese

1. In a large skillet brown turkey and add the packet of seasoning. (put aside)
2. In same skillet cook and stir potatoes and beans for 3-5 mins. over med-high heat.  Cook until heated through. (add to ground turkey)
3. In a small bowl, mix sour cream and salsa.
4. Spread mixture, cheese, and salsa sauce, sprinkle with silantro and wrap it up in foil and off you go!

My Thursdays are like this, too. Savannah has swim and then we head over to dance. Dinner is shot and everyone is grumpy until we get home at 6:45. Then usually it is a scramble unless I have something int he crockpot. Great idea for next week. :)
