Weekly Menu Feb. 21-Feb. 25

I counted yesterday as a day off! So I am posting my menu today!
Monday:
Roasted Chicken, Pilaf, Broccoli, Garlic Bread, Strawberries
(Picked up Roasted Chicken from Savemart last night, and Pilaf 90 sec. pouch, and put it all together as I came home from my daughter's dress rehearsal last night!)

Tuesday:
Roasted Turkey, Brown Rice, Roasted Potatoes & Carrots
(Picked up Roasted Turkey from Savemart, Brown Rice 90 sec. pouch (on sale), and actually roasting my own veggies...makes for an easy and quick dinner!)

Wednesday:
Lemony Penne & Broccoli

Thursday:
Meatball Heroes

Friday:
Chicken Pasta Soup
6 Boneless Skinless Thighs (I'm using breasts)
4 Carrots, cut into small pieces
4 Stalks Cellery cut into 1/2 inch pieces
1 Medium onion, halved
2 Garlic cloves smashed (or minced garlic)
2 bay leaves
Kosher Salt and black Pepper
1/2 cup small pasta (such as stellette or alphabet)
1/4 cup chopped flat-leaf parsley
Crackers for serving

*In a 5-6 quart slow cooker, place the chicken, carrots, celery, onion, garlic, bay leaves, 6 cups water,1 tsp salt, 1/4 tsp pepper
*Cook covered, until chicken is cooked through, on high for 4-5 hours or on low for 7-8 hours
*Twenty mins. before serving, transfer the chicken in a bowl. Remove and discard onion and bay leaves. If slow cookers on low, turn to high. Add pasta to slow cooker, cover, cook until tender 15-18mins.
*Meanwhile, shred chicken, discard bone (or not if you used breasts) When pasta is cooked, stir in chicken into the soup along with parsley. Serve with crackers:)
